Loya is a contemporary North Indian fine-dining restaurant at The Taj Mahal Palace, Mumbai, offering a culinary journey through the diverse food traditions of Northern India. The restaurant draws inspiration from the Himalayan foothills, Punjab and Kashmir, combining traditional cooking techniques with a refined luxury-dining experience. The menu celebrates time-honoured techniques including dhungaar, dum, baghaar, sigdi and sil-batta, with signature dishes such as Gosht Ki Lazeez Pasliyan, Sepu Wadi, Dal Jakhiya and Loya Chaat. Loya also offers curated tasting journeys, including its Loya Journey 2 Padao and 3 Padao menus. The restaurant's design takes inspiration from a traditional North Indian caravanserai, incorporating sandstone masonry, arches, alcoves and geometric motifs. The experience also incorporates folk-inspired music and storytelling elements, making Loya more than simply a dining destination.
